Unrolled Cabbage

I found an interesting recipe to use my cabbage.  It is called unrolled cabbage and is basically cooked cabbage rolls, but not rolled up.  I also modified the recipe to give it a bit more flavor, and cut back on the ingredients since I don’t want to be eating this dish for the next week and a half, even though it turned out quite yummy. Fast and easy since you don’t have to roll the stuffing in the cabbage leaves.

Unrolled Cabbage

1/4 head cabbage, sliced into strips
1/2 # ground beef
1 garlic clove, minced
1/2 onion, diced
2/3 cups cooked long grain brown rice
Cooking spray
1 14 oz can crushed tomatoes
Salt and pepper to taste
Crushed dried red peppers to taste
Shredded cheese of your choice.
Cook rice according to package directions. I made extra rice to use in future meals.
Cut cabbage into strips

Saute 1/2 of the cabbage for 2-3 minutes. Put cabbage in bottom of baking pan. I used a 8-8 glass pan.

Saute onion and garlic, then add ground beef and brown. Add rice and mix thoroughly.

Spread beef mixture on top of cabbage.

Saute remaining cabbage 2-3 minutes and spread on top of need mixture.

Top with crushed tomatoes.

Now you can bake this in the oven at 350 for about 50-60 minutes, or until cabbage is to your liking for tenderness OR you can cook it in the microwave for 20-30 minutes. I used the microwave.

Once cooked, spread cheese over the top and put it under the broiler for 2-3 minutes until cheese is melted and starts to turn golden brown.  I didn’t use much cheese – but you can use as much as you like.

Remove from broiler, let stand for 5-10 minutes, cut onto servings and enjoy.

For dessert, I cooked some of the pears from the freezer with a bit of sugar and corn starch, with a little ground ginger and cinnamon.
